Question: My green tea is sometimes bitter. How can I brew the
best tasting tea possible?
Answer: Tea leaves can be sensitive to temperature and steeping time.
Robust black teas are best when brewed in extremely hot water, but to get the the best tasting white, green, or oolong tea
the leaves should be brewed in less than boiling water and for a shorter amoujnt of time (see chart below). Water quality
is another important element in brewing a great cup of tea. If possible, use bottled or filtered water for your tea.
